EXPLAINER: Why the Color Of Egg Yolk Matters and What It Means

The color of an egg yolk is often associated with the nutritional value and overall quality of the egg. While many people may not give much thought to the hue of the yolk, it actually tells us quite a bit about the chicken’s diet and, in some cases, the egg’s freshness. Yolk color can range from pale yellow to deep orange, and the variation largely comes down to what the chicken eats.

Chickens that are fed a diet rich in yellow or orange plant pigments, such as marigold petals or certain types of corn, tend to produce eggs with darker yolks. These pigments, specifically carotenoids like lutein and zeaxanthin, contribute to the rich orange color and are beneficial antioxidants for humans, promoting eye health.

On the other hand, hens fed a diet of mainly wheat or barley may produce eggs with lighter, pale yellow yolks.

However, the color of the yolk doesn’t directly correlate to the egg’s nutritional content.

Eggs from free-range or pasture-raised chickens often have darker yolks because of the varied diet these chickens receive, which includes grasses, seeds, and insects, but eggs from caged chickens can also be nutritious, even if the yolk is lighter.

Ultimately, the color of the yolk can give you insight into the chicken’s diet and lifestyle, but it doesn’t necessarily indicate an egg’s freshness or quality.

When it comes to taste and texture, other factors, such as freshness and how the egg was cooked, will play a more significant role.
