A karpatka is a choux pastry cake that takes its name from the Carpathian mountains. Traditionally filled with pastry cream and sometimes marmalade or jam, these days, cooks are filling them with all sorts of delicious things

You’ll need 2 x 20cm springform tins, or you can re-use one tin. A recyclable (or better yet, reusable) piping bag is also strongly recommended.
