These Roasted Sweet Potatoes have browned, caramelized edges and soft, creamy centers, with no parboiling or cornstarch needed! I preheat the sheet pan in a HOT 450°F oven, dry the potatoes thoroughly so they roast instead of steaming and staying pale, and cut them into evenly sized large cubes. Then they just need one flip before they’re done! You only need 3 basic ingredients for this back-pocket side dish, so it’s perfect when I want dinner to stay simple. The whole batch costs under $3, takes about 40 minutes from start to finish, and gives me a versatile base for dinners, power bowls, or meal prep.

Delicious Roast Sweet Potatoes Made Easy

To get these roasted sweet potatoes perfectly browned and caramelized, I preheat a metal sheet pan so it’s already hot when the oiled cubes go in. That immediate heat gives the first side a head start on browning before the centers begin to soften. Thoroughly drying the cubes and leaving visible room between the pieces are just as important. If they’re wet or crowded, they’ll steam or “stew” instead of roast (still delicious, just not the goal!). These potatoes are a sensory treat that can be as simple as my 3-ingredient version here, or you can jazz them up with allllll the seasonings and sauces.

It’s also a well-known fact that sprinkling sugar on something makes a toddler more likely to try it, but why would you do that to yourself?! Kids + sugar = regret.
