2 Major Ways to Check if your Cake is done or fully baked especially for big sized cakes: 

If you are baking a big cake (from 10 inches & above )  

After 1 hour, when you are sure that the cake is no longer rising, you check it by inserting a skewer or kebab stick into the center of the cake. If the skewer or kebab stick comes out with smears of the cake mix thats the uncooked batter , then the cake is not done. If it comes out clean and dry, with only an oily smear apperance (oily look) then the cake is done. And please know this Wooden skewers are a bit rougher than metal skewers because they tend to pick up smears more. So if the wooden skewer comes out clean, the cake is fully baked. No Baker wants to end up with an undone cake.

 

The Second way you can carry out this check is to gently press the cake down at the middle with your open palm or finger tip. If the cake springs back when you lift your palm or your finger and there is no impression of your palm or finger on the cake, then the cake is fully baked . Please make sure your palm or finger tip is clean. Wash your hand before you do so

Recently, I started advising Bakers not to use knife or palette knife to check if cakes are fully baked ...because I noticed that they create visible mark or cut on the cake and atimes if the cake is fully baked and you want to lift or carry the cake, it tends to Scatter or crack because of the knife mark and most times, if its a plain cake you need to sell without frosting, that mark or dent gives the cake an ugly look.
