Budget-Friendly Cheesy Birria Tacos Recipe

Birria is a cozy Mexican stew made by slow-cooking meat (like goat, lamb, or beef) in a rich, flavorful broth (aka consomé) until it’s fall-apart tender. The taco version takes that same idea but makes it extra fun!
