Ethiopia has made significant contributions to the world’s food history—after all, this is where Arabica coffee was first discovered. It’s also a very food-centric country, and locals enjoy not only the flavors of their foods but also the opportunity that meals present to gather and build community. The base of Ethiopian cuisine is injera, a fermented pancake-like bread made from a grain called tef. It’s served with a stew made with beef, lamb, chicken, fish, or vegetables. But there’s far more to Ethiopian cuisine than just this classic. Here are some of the dishes you should try while traveling in Ethiopia.

Ethiopian tibs is a dish made from cubed beef or lamb, peppers, veggies, lemon juice, and other ingredients. It is a flavorful and delicious meal that is gaining popularity worldwide. Beef tibs recipe is made from beef as the protein, while Ethiopian lamb tibs will use lamb.

Ingredients

1 pound beef sirloin or chuck cubed

2 Tablespoons plus 1/4 teaspoon Ethiopian Berbere

1 Tablespoon course sea salt

2 medium onions sliced thin

6 cloves garlic minced

1 inch of fresh ginger minced

1 can of diced tomatoes

5 Tablespoons butter

1 Tablespoon cooking oil

Cooking Instructions

  • Coat the beef with coarse salt and 1/4 teaspoon Ethiopian Berbere
  • In a medium pot or small Dutch oven on medium heat, melt butter
  • Add onions, garlic, ginger and remaining Berbere
  • Sauté until onions are soft, stirring occasionally
  • Add tomatoes and continue to cook, about 30-45 minutes total
  • Remove braising liquid and puree in a blender or food processor(optional)
  • Heat the same pan you used for the braising liquid on high heat and add cooking oil
  • Sear beef in small batches (don’t over crowd cooking surface), about 2 minutes per side or until golden brown.
  • When searing is done return all the beef to the pan and pour the braising liquid into the pan. reduce the heat to simmer, cover, and cook for 20-30 minutes.

And you’re ready to eat.

For someone like me who likes meat a lot, I will probably have to prepare my passport and hop on the next flight to Ethiopia.

I know that Ethiopian Airlines offers flights to Ethiopia from All around the world, even Ghana where I am writing this from.

So, Ethiopia, here we come…!
